Highlands and island dining destinations to collaborate for one-night-only supper club

Two award-winning Scottish dining destinations are teaming up for a guest chef supper club this autumn.

The five-star Links House at Royal Dornoch is teaming up with The Three Chimneys on the Isle of Skye to launch the first in a series of guest chef supper clubs on Saturday 31 October, 7pm-10pm.

For one night only, head chef of The Three Chimneys, Paul Green, is heading 150 miles from the misty isle to Dornoch, where he will join Links House head chef, Theo Creton, to create a collaborative eight-course dinner.

The Three Chimneys draws on Skye’s seafood, local producers and landscape, while the Links House fine dining restaurant, MARA, shares a commitment to seasonal Scottish ingredients, allowing their flavours to lead.

Theo and Paul will showcase the best seasonal produce from the North Highlands and the Isle of Skye, allowing room for each chef’s personality to shine through. Paul and Theo will serve four courses each. Canapés, bread and petits fours will also feature an element from both chefs.

Highlights of the collaborative eight-course dinner will include Talisker cured sea trout; Ross-shire beef tartare; hand-dived Orkney scallops; and Portmahomack pork crumpets.

The first in a series of chef supper club events will be served in both the Links House fine dining restaurant, MARA, and the hotel’s private dining space, The Anteroom. Theo and Paul will personally introduce their dishes to both tables throughout the evening, ensuring everyone hears directly from each chef.

MARA holds two AA rosettes for culinary excellence and takes its name from the Scottish Gaelic world for the sea. Led by head chef, Theo Creton, the kitchen brigade seeks to ensure each dish served is Scottish, seasonal, sustainable, and slow, producing as close to zero waste as possible.

Commenting on the launch of the new guest chef supper club series at Links House, Theo Creton, said: “I’m really excited to be working with The Three Chimneys’ Paul Green to showcase the quality and diversity of local produce from Skye and the North Highlands.

“Bringing these regions together gives us a great starting point to celebrate the produce that surrounds us and see how our different styles approach it.

“When I first started my cheffing career in Scotland, The Three Chimneys was one of those places I constantly heard people talk about. It has long been one of the great bastions of Scottish cooking, so having Paul open the series feels really special.

“To now be in a position where we can welcome Paul to Dornoch and collaborate with The Three Chimneys feels like a bit of a full-circle moment. It’s exciting to think that Links House and MARA are now at a point where we can cook alongside places I’ve looked up to since arriving in Scotland."

Paul Green, head chef at The Three Chimneys on the Isle of Skye, added: “Returning to the North Highlands to co-host this special collaborative dinner at Links House is a huge privilege for me.

“I spent my early career working in the region, so I fully appreciate the quality and variety of local produce from Ross-shire to Sutherland. It’s also a great opportunity to showcase the best of Skye and bring my style of cooking at The Three Chimneys to Links House for one night only.”

The guest chef supper club at Links House presented by Theo Creton and Paul Green on Saturday 31 October is priced at £130 per person for an eight-course dinner. An optional wine pairing will be available for £80 per person. Due to the nature of this collaborative menu, dietary requirements, allergies and menu preferences cannot be catered for.

For advance bookings only, visit the Links House website.

Further updates on the guest chef supper club series at Links House will be announced over the autumn and winter season.

The Links House fine dining restaurant, MARA, is open to both hotel guests and non-residents. Links House is situated on Golf Road at Royal Dornoch in Sutherland on the world-famous North Coast 500 and holds the UK’s most northerly Michelin Key. The luxury venue was recently crowned one of the top 50 boutique hotels in the country.
